Weekly Recipe: Chicken and Asparagus Crepes

Spring is here and that means your food pallet should match the weather.  Warm, light, and flavorful dishes are what you need as the temperatures rise. With this Chicken and Asparagus Crepes recipe you can create a healthy twist on a wrap. If you are interested in making it here’s what you need and how to make it!



Ingredients

Directions
Preheat the oven to 425 degrees F. Butter a large baking dish. Combine the chicken, ricotta, 1/2 cup parmesan, 3 tablespoons herbs, 3/4 teaspoon salt and 1/2 teaspoon pepper in a medium bowl. 

Spoon about 1/4 cup filling across the lower half of each crepe; roll up to enclose the filling. 

Place the crepes, seam-side down, in the baking dish. Cover with foil and bake until the filling is hot, about 15 minutes.

Meanwhile, melt 3 tablespoons butter in a skillet over medium-high heat. Add the shallot and cook until it softens, about 1 minute. Add the asparagus and cook until just tender, about 3 minutes. 

Add the chicken broth, lemon zest and the remaining 1 tablespoon herbs and simmer until the sauce is slightly thickened, about 2 minutes. Stir in the remaining 1/4 cup parmesan and season with salt and pepper.

Divide the crepes among plates, top with the asparagus and sauce, and sprinkle with parmesan. Enjoy!

Easy to Grow Edible Plants

Now that spring is here, you finally have an inspiration to begin those decorative and productive home projects. So why not start with something that will give back to you in so many ways? Home gardens are easier than you think, and we are here to help you add some freshness to more than just your living space. Whether your taste runs to fruit plants or herb gardens, you don’t need a lot of earth to add a tasty element to your apartment. Spice up your meals with a selection of home-grown edibles that are so fresh, they’re dirty!

Strawberry Plants

Strawberries are surprisingly easy to grow. If you are looking to start a garden, begin with a small pot of these luscious fruits, purchased with bare roots. The tendrils will start to leaf within a couple of weeks after putting them in the ground. Water them daily but make sure they don’t just sit in water. If you notice any decay or fungus, remove those branches immediately to prevent harmful spread. Once the berries are ripe, pick them, ripe and juicy, for your entire family.

Basil Plant

A basil plant is the perfect outdoor growing option. Easy to grow and care for, basil usually is watered every other day. Make sure not to water too much or too little. Monitor the bright green -- not yellow -- and the moist -- not limp -- leaves as the best indicator of correct watering. Planting environment should be fairly warm with lots of sunlight. For a growth spurt, pick off the big, top leaves, which never taste as good anyway. Basil is an easygoing plant  with fabulous flavor that will add lovely greenery to your apartment.

Grape Tomatoes

This versatile fruit -- that’s right, not a vegetable, because it has seeds -- is the perfect addition to any summer meal. If you have hooks on your patio, the grape tomatoes make beautiful hanging plants. If not, you can always stick to a traditional ground pot. Take care the plant is well watered, saturated enough to reach the deep roots. Tomatoes love light so place them where they can bask in it most of the day. It will take a couple of weeks for your tomatoes to mature. Picking time is best once they turn red. Any earlier and they can tend to dry out while they mature, even if on a sunny windowsill.

Weekly Recipe: Marathon Monday Eggplant Pasta Salad

It’s Marathon Monday and we’re celebrating here at Faxon Commons! Whether you’re cheering on the runners at the finish line in Boston or following the elite on television, it’s one of the most exciting days of the year. 

Since runners are loading up on carbs, we thought it would be appropriate for our weekly recipe to include a must-have pre marathon meal, PASTA! If you try this out, be sure to share a photo on our Facebook or our Instagram! 



Ingredients

  • 3 tablespoons olive oil
  • 2 celery stalks, sliced
  • 1 eggplant, cut into 1/2-inch pieces
  • 1 pint grape tomatoes, halved
  • 1/4 cup tomato paste
  • 1/4 cup white wine vinegar
  • kosher salt and black pepper
  • 1 tablespoon sugar
  • 2 tablespoons capers
  • 1/4 cup pine nuts, toasted (optional)
  • 1 cup fresh flat-leaf parsley, chopped
  • 1 pound dried penne

Directions

  1. Heat 2 tablespoons of the oil in a large saucepan over medium-high heat. Add the celery and cook for 3 minutes. Stir in the eggplant and tomatoes.
  2. In a small bowl, combine the tomato paste, vinegar, ¼ cup water, 2 ½ teaspoons salt, ¼ teaspoon pepper, and the sugar. Stir into the eggplant mixture.
  3. Cover and reduce heat to medium-low. Cook, stirring occasionally, until the eggplant is tender, 15 to 20 minutes.
  4. Remove from heat and stir in the capers, pine nuts (if desired), and parsley.
  5. Meanwhile, cook the penne according to the package directions. Toss with the remaining oil; let cool. Combine with the eggplant mixture and serve.

Weekly Recipe: Spring Pizzas for a Light Snack After School or Work!

Spring is here and that means your food pallet should match the weather.  Warm, light, and flavorful dishes are what you need as the temperatures rise. Pizzas are a classic that we all crave a least once a week, if not more, but they don’t always have to include the three basic ingredients of cheese, sauce, and dough. This season mix it up with these Spring Pizzas these sauce-less, yet healthy and flavorful mini pizzas! Here’s what you need and how to make them:



Ingredients 
1 pound pizza dough
All-purpose flour, for dusting
2 tablespoons extra-virgin olive oil, plus more for brushing and drizzling
6 ounces ramps or scallions, trimmed
Kosher salt
1 cup ricotta cheese
1 teaspoon grated lemon zest
Coarse sea salt
Coarsely ground black pepper
1/4 cup fresh basil leaves
Grated parmesan cheese, for topping

Directions
Preheat the oven to 500 degrees F. Divide the dough into 4 pieces on a floured surface. Brush a baking sheet with olive oil. Stretch the dough into four 6-inch rounds; place on the baking sheet and bake until golden, about 12 minutes.

Heat a large skillet over medium heat. Toss the ramps or scallions with 1 tablespoon olive oil and season with kosher salt. Saute until just wilted, about 1 minute. Transfer to a cutting board and cut into pieces.

Mix the ricotta, lemon zest, the remaining 1 tablespoon olive oil and some sea salt and pepper in a bowl. Brush the crusts with olive oil (this will protect them from getting soggy), then spread with the ricotta mixture and season with sea salt. Top with the ramps or scallions. Return to the oven until warmed through, about 2 minutes.

Top the pizzas with basil, parmesan and a drizzle of olive oil and enjoy!

Weekly Eats - Grilled Portobello, Bell Pepper, and Goat Cheese Sandwiches

Fortunately, we seem to be moving past the cold season as we finally begin to feel the warmth of spring. The new season will bring some of our favorite types of foods including lots of fresh fruits and vegetables. We’re looking forward to grilling up some of our favorite, hearty veggies – Portobello mushrooms! Try this delicious recipe and let us know what you think in the comments below! Grilled Portobello, Bell Pepper, and Goat Cheese Sandwiches

What You’ll Need:
1/4 cup balsamic vinegar
1 tablespoon olive oil $
1 garlic clove, minced
1 red bell pepper, cut in half and seeded
1 yellow bell pepper, cut in half and seeded
4 (4-inch) portobello mushroom caps
Cooking spray
1/3 cup chopped fresh basil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 (2-ounce) Kaiser rolls
1/2 cup (4 ounces) soft goat cheese 


How It’s Made:
1. Prepare grill to medium-high heat.

2. Combine balsamic vinegar, olive oil, and garlic in a large bowl. Add bell peppers and portobello mushrooms; toss gently to coat. Remove vegetables from vinegar mixture, and discard vinegar mixture.

3. Place bell peppers and mushrooms on a grill rack coated with cooking spray; grill 4 minutes on each side. Remove vegetables from grill; cool slightly. Cut bell peppers into thin strips. Combine bell peppers, basil, salt, and black pepper in a small bowl.

4. Cut rolls in half horizontally; spread cheese evenly over cut sides of rolls. Arrange 1 mushroom cap on bottom half of each roll; top each serving with about 1/3 cup bell pepper mixture and top half of roll.

5. Place sandwiches on grill rack coated with cooking spray. Place a cast-iron or other heavy skillet on top of sandwiches; press gently to flatten. Grill 3 minutes on each side or until bread is toasted (leave cast-iron skillet on sandwiches while they cook).

How to Declutter Your Apartment this Spring

Spring is upon us -- even if the weather isn't fully cooperating -- and that puts spring cleaning on the mind here at Faxon Commons. It’s time to clear out the clutter you've accumulated and bring new life to your apartment. With these tips you can eliminate the stress of a messy apartment and approach the upcoming warm months with a renewed outlook!



Set a Date
In order to successfully declutter your apartment, you need to set a mindset and get it done. Along with this you need to set a date. Otherwise, you will find yourself saying, “I’ll do it next weekend” every weekend. If you don’t finish in one day that’s fine, but create a to-do list to help you keep track of what you still need to accomplish. Once you start to see your hard work paying off you’ll want to complete the whole apartment!

Use Wall Shelves
Clutter often builds from the floor up. To eliminate the mess, move the clutter from under your feet onto your walls. Shelves not only help create a neat place to store what was underfoot, but can also serve a dual purpose, providing a decorative additions to your apartment. Try colorful or unusual shapes to add extra style to your rooms and start seeing your floor again!


Tackle Your Closet
Fashion trends come and go therefore they have an expiration date in your closet. Apply the golden rule: if you haven’t worn it in a year, you’re finished wearing it. You can even do “The Hanger Test.” Turn all hangers in one direction and once you wear an item turn the hanger the other way. If after a couple months a hanger hasn’t been switched it’s probably an indication for you to get rid of that item. By clearing out your closet you add space for new purchases and can also provide donations for Goodwill or the Salvation Army.  Looking at a clarified closet can also make picking out an outfit in the morning that much more enjoyable!
Fill a Trash Bag
The single best way to declutter your apartment is to remove all trash  It’s surprising how much extra unnecessary stuff can gather in corners and closets around your home. Set a goal to fill one trash bag. Go through your kitchen, bedroom, and living room and remove any items that can be classified as trash. After tossing all that clutter, you’ll feel brand new!  

Invest in Containers
Containers are necessary when it comes to organization. Having an assigned place for everything in your life will instantly help declutter your apartment.  Once you have your containers and organization tools assign a location for each item in your apt. Not only will this help declutter but will also help you maintain a neater, easier-to-clean home.

Take on Junk Drawers
Junk drawers often become a feeding ground for clutter. Usually you end up throwing anything that doesn’t have a designated location into these drawers and the disorder continues to grow. Take the drawer out and empty it on a table. Then sort the drawer into three piles:

1. Stuff belongs in the drawer
2. Stuff that belongs elsewhere
3. Trash

Once you have these three piles sort what you want to put back in the drawer and find locations for the other items. This task could be accomplished as you cook dinner or are catching up TV and will make your life a lot easier when you need to find something.

Any vehicles not removed from the areas being swept will be towed at the owner’s expense.  A tow truck will be on the property all day, for both of these days, to make sure that the sweeping is complete and successful

It is important that you follow these procedures and if they are not understood please call the Leasing Office at (617) 472-6766.  Please do not assume any of the procedures, as the owners of the vehicles will be held responsible for payment to the towing company
